Cold breakfast oatmeal recipe with delicious banana and cinnamon

I know the usual combination is apple and cinnamon (which would work as well) but the banana and cinnamon in this cold breakfast oatmeal recipe go really well together. And it’s vegan, obviously. This cold breakfast oatmeal recipe is a healthy start to your day, it’s high in protein at around 13g per serving so it’ll keep you full until lunch. It’s also high in fiber (around 16g per serving) and has the right balance of healthy fats and carbs. The chia seeds are a good source of omega 3 as well.

It’s my go to summer breakfast recipe, I have it at least 3 times a week when it’s nice weather (and sometimes when it’s not so nice weather). It takes 5 minutes to prepare but also works really great as an overnight oats recipe if you want to prepare it the night before, just put it all together minus the topping, just pop that on in the morning.

I’ve also included some alterations if you’re reducing your calorie intake or upping your calorie intake.

Makes 1 serving

Prep time 5 minutes

  • 40g oatmeal (rolled oats or porridge oats if you’re in the UK)
  • 75g yogurt. I use Alpo, both vanilla or coconut taste really good
  • 50 – 100ml milk. I’ve used unsweetened almond and soya, both go well
  • 10g chia seeds
  • 1/2 – 1 teaspoon ground cinnamon
  • 1 teaspoon vegan maple syrup

 

Topping choices

  • 1 medium banana, sliced
  • 25g blueberries
  • 10g chopped nuts. Hazelnuts, walnuts etc

 

Method

  1. Mix the oatmeal, chia seeds, yogurt and milk together until combined. If you like it more runny use 100ml of milkIngredients mixed
  2. Stir in the ground cinnamon, 1 teaspoon will give it a strong cinnamon flavour so if you’re not sure go with less
  3. Stir in the maple syrupMaple syrup added to bowl
  4. Top with your favourite fruit, mine is sliced banana with a little dust of cinnamon to finish it off, went a bit OTT on the cinnamon dust for the photo though!Finished oatmeal recipe
  5. Either enjoy straight away or leave in the fridge for an hour for the oats to soften and become more creamy

Approximate nutritional values using 100ml unsweetened soya milk and 1 banana as the topping

Calories – 411 Protein – 13.9g
Fat – 10.6g Fibre – 16.7g
Carbs – 65g Sugars – 20.2g

 

If you’re reducing your calorie intake/cutting phase of muscle building

Reducing the oats by 10g knocks about 38 calories off. Swapping the banana for blueberries will take off around 90 calories. 128 calories in total

 

If you’re increasing your calorie intake/bulking phase of muscle building

Upping the oats by 10g will add 38 calories. Adding 10g of chopped hazelnuts will add around 66 calories. 104 calories in total.

 

Alternatives

The recipe is really versatile so you can add things in or take stuff out if you don’t like any of the ingredients. Try swapping the chia seeds for flax seeds or the cinnamon for nutmeg (use 1/4 of the amount), or take it out completely. And if you don’t like bananas or blueberries you could try raspberries, kiwi, mango, or anything else you fancy. Heck you could even top it with vegan chocolate sauce, although not too much!

    Great read. I am not 100% vegan but I do eat vegan meals at times. I did go vegan for 1 year but started to eat meat again after that. I am deciding to go back vegetarian/vegan and will gradually go back to reducing my meat intake.

    I don’t drink milk, I use almond and coconut milk. I eat a vegan breakfast every morning and love it.

      Even not being 100% vegan is better than being a big meat eater, you’re still saving a fair few animals (if you were 100% vegan you’d save about 100 animals a year)

    Thank you so much for sharing such a deliciouse recipes!! I love it! I oats and banana. That is my favourite breakfast and now you make me hungry in the middle of the night. Well I never put cinamon on top or using a coconut yogurt, because I don’t like the coconut. Oh, also I always use a honey instead of maple syrup because in Spain, maple syrup is not that familiar and we have so many types of honey in the market. I normally use the lavender honey. It is really delicious!

      Oh I love Spanish food, tapas in particular and a nice vegan paella!

      If you like cinnamon give it a go as it adds a lovely flavour to the oats. Any yogurt would work, if you don’t like coconut the Alpro vanilla yogurt tastes really good (but it has a few more calories in)

      I used maple syrup in the recipe because honey isn’t vegan but honey would also work well.

    Great post. I’m thinking of going vegan, I already stopped eating meat, but I still eat chicken. I bought almond milk for the first time yesterday, still haven’t tried it.

    That looks delicious, I love oatmeal and bananas. Don’t you add sweetener? Your recipe seems easy to make and it’s healthy.

      Almond milk would go great with the oatmeal! As it has a slightly nutty flavour.

      I add maple syrup to the oatmeal to make it sweeter, it goes really well in it.

      Great that you’ve stopped eating other meat, you’re almost there so would be fairly easy to go all the way and go vegan : )
